Recipe - Spicy Chicken Pasta

For a few weeks now during my fitness challenge, I have been tracking my macros and I have been following some recipes given in the group. I have as well been trying lots of different things and still eat what most people call 'crappy' food. I absolutely love pasta and I'm sure most of you do too. This is a really simple dish I've put together to make for a late lunch/dinner option and is filled with mainly protein and carbs but it's super easy to make. It's not been easy preparing meals and I'm far from perfect but this dish is not skipping on any of the good stuff and isn't too heavy on the calories either.


It's really simple which means anyone can make it!

Ingredients - Serves 4  

400g Diced Chicken Breast
300g Penne Pasta 
400g Tinned Chopped Tomatoes
500g Tomato and Basil Sauce
1 x Brown onion
2 Garlic Cloves
1 Tsp Paprika
1 Tbsp Black Pepper
1 Tsp Dried Basil
Pinch of Salt

30g of Grate Mozzeralla - optional



Method

1. Boil a pan of water and add the Penne pasta and a pinch of salt. Cook for 8 - 10 minutes or until the pasta is soft. 

2. Meanwhile, fry the chicken in a non-stick pan with the onion and garlic for 2 minutes or until the chicken is cooked through/golden. 

3. Add the tinned chopped tomatoes, tomato and basil sauce and the spices and cook for another 2 minutes. 

4. Drain the pasta and add back to the pan with the chicken. Simmer for 2 minutes and then serve and enjoy! (also add cheese if you prefer).

If you are only cooking for one, I would put the rest in a lunch box and put it in the freezer for later.
